Food Safety Training
Why should I consider a food safety training?
The Food Hygiene (England) Regulations 2006 require that the proprietor of a food business must ensure that they and all employees who handle and prepare open food are instructed and/or trained in food hygiene matters to a level appropriate to their job.
Staff preparing food should be trained to the standard of the Level 2 Award in Food Safety in Catering or equivalent. This can be achieved by attending an accredited food hygiene course or through providing structured in-house training.
Who runs the courses?
Courses are run by a number of different organisations including schools, colleges, specialist training companies and Brighton & Hove City Council. We can provide details of other organisations offering Food Hygeine Training in other languages. For a list of training providers please phone the Food Safety Team on (01273) 294491.
What does a course consist of?
The Accredited Level 2 Award in Food Safety in Catering course run by the council consists of a total of six hours of tuition on food hygiene, covering the following subjects:
- costs of poor hygiene
- food poisoning and food-borne diseases
- how germs grow in food
- contamination of food
- prevention of food poisoning
- improving personal hygiene
- storage and temperature control
- preparation, cooking and cooling of food
- construction and design of food premises
- cleaning and disinfecting
- pest control
- food hygiene law requirements
- control of food safety risks
- hazard analysis
This course is held at Brighton Town Hall and costs £55 per person. The fee includes includes registration, food hygiene handbook, examination entry, certificate and refreshments.

The City College Brighton also run an Intermediate Food Hygiene course. This course is recommended for food handlers who have a supervisory role, for example Head Chefs and managers. Further details can be found on this direct link to the City College Brighton website
